This is a popular winter warmer where i live.
Ingredients-
(I put the ingredients seperately but most Irish supermarkets will sell these vegetables in pre-prepared bags).
*1 fresh leek
*1 fresh stick of celery
*1 onion
*1 large fresh carrot
*1/2 large mugful of pearl barley
*1 cube of chicken stock or veg stock for veggies.
*Salt and black pepper
- Wash the vegetables and chop.
- Add the vegetable to a saucepan along with your cube of stock.
-Add the barley.
-Season generously with salt and black pepper.
-Fill the pan with water above the contents and bring the boil.
-Boil for about 1/2 an hour, soup will be ready once the barley is soft and expanded. The soup should be green in colour.
-Serve.
(meat eaters can add pieces of chicken or beef if they like).
